After receiving the dried sea cucumber, rinse off surface dust with clean water and soak it in a cool, oil-free container for one day. Make sure your hands and the container are completely oil-free!

On the second day, if the sea cucumber isn’t soft yet, replace the water and soak for another day. In hot weather, keep it in the fridge.

On day two or three, clean out the internal organs and mouth of the sea cucumber. After thoroughly cleaning, place them into a thermal cooker. Bring to a boil on the stove, then simmer over medium heat for 10 minutes. Afterward, seal the thermal cooker to retain heat and let it sit overnight. (If you don’t have a thermal cooker, a rice cooker with a keep-warm function works too!)

After 12 hours of heat-retained soaking, the sea cucumbers will have expanded significantly. Take them out, rinse, and soak them in clean cold water again. Store in the fridge for another day.

Repeat the cycle: boil, keep warm overnight, soak in fridge for a day. This needs to be done 2–3 times. For larger sea cucumbers, repeat the process 3 times. For smaller ones, 2 rounds are enough.
