Australian banana prawns, peeled and butterflied into cutlets, then individually quick frozen so every piece comes out of the bag separate. Take what you need and put the rest straight back in the freezer.
Banana prawns have a softer, sweeter flesh than tiger or king prawns and a clean finish that suits a quick, hot cook. At 16/20 to the kilogram these are a good middle size — big enough to hold their shape on a skewer, small enough to go three or four to a serve.

- Curry or stir fry: added at the very end so they stay tender.
Cooking Tip:
Prawns are done the moment they turn opaque and curl. Anything past that is a lost prawn.
Storage:
Keep frozen at -18°C. Cook from frozen or thaw briefly in the refrigerator. Do not refreeze once thawed.
