Unpasteurised — Straight From the Barrel
Ordinary soy sauce is heated before bottling, which stabilises it but flattens the aroma. Nama (生) shoyu is never heated. It is pressed from the mash and bottled as it is, so the volatile aromatics that cooking would drive off survive into the bottle. Pour it next to a standard soy sauce and the difference is obvious before you taste either one.

The cho-tokusen (super premium) grade of the Shimousa range from Chiba Shoyu (ちば醤油), brewed in century-old cedar barrels from Japanese whole soybeans and Japanese wheat, then left unpasteurised.
